MacRumors contributor Steve Moser tweeted that Apple Pay works with Edge and Chrome in iOS 16 beta 4.

Moser showed the "Continue with Apple Pay" option when trying to pay for an order on Apple's website via the Microsoft Edge browser.

As for other browsers, users came to Moser's rescue, confirming Google Chrome and Firefox compatibility, including on the second and third iOS 16 betas.

Apple still doesn't work with third-party browsers on the latest macOS beta. As Moser notes, it's likely that it's the developers of Chrome, Edge and Firefox that use their own engines and they're unlikely to want to switch to Safari's WebKit engine.

Apple's decision may have something to do with the European Union's plans to fight the tech giants' monopoly. The Digital Markets Act will come into force in the spring of 2023 and will impose a number of rules on big companies such as Apple, Meta and Google to promote competition with smaller organisations.
